Valentine's Jammy Dodgers

Oh, the classic jammie dodger - beautiful vanilla biscuits and lovely berry jam - what could be better?!


Well, these, of course!


Lovely short vanilla biscuits - think shortbread, but a bit more durable; beautifully sweet-sharp raspberry jam - or whatever berry you fancy! We're making our own here, and it's super simple. And they're perfect with a dusting of icing sugar over the top.


Gift them to the ones you love this Valentines Day - or to yourself - self-love is just as important!

 
 

Valentine's Jammy Dodgers


Ingredients:

175g plain flour

100g butter

75g caster sugar

1 large egg yolk

1 tsp vanilla extract

150g raspberries (I used frozen, but fresh will work just as well!)

2 tbsp caster sugar

1 tbsp water


Method:

1. Combine the flour and sugar in a large bowl, and rub in the butter until you get a sand-y breadcrumb texture. 2. Add the egg yolk and vanilla extract, and mix well until a dough is formed. 3. Knead a little to make the dough come together, and then wrap in cling film and refrigerate for 20 minutes. 4. Place the raspberries, sugar and water in a pan on a high heat. Bring to the boil, and then simmer for 5 minutes, until thick and jammy. Set aside to cool completely. 5. Pre-heat your oven to 180ºC (160ºC Fan/Gas Mark 4). 6. Roll out your biscuit dough between two sheets of greaseproof paper, until approximately 5mm thick. Cut circles using a 5cm cutter and place onto baking sheets. 7. Using a small heart cutter, cut hearts out of the middle of half of the rounds. 8. Bake for 10-12 minutes until lightly golden. Leave to cool completely. 9. To assemble, spread the whole biscuits with the raspberry jam; press a cut out biscuit onto the top of each one, and dust with icing sugar!
